Kristina Takes The Cake, Literally.

My first baking fail happened today, all because I didn’t have a spoon! I love to bake but only half of my kitchen things have arrived from my former home in New York. I was half way through baking a birthday cake for a co-worker and I realized I had NO SPOON to mix it with. While I did have a hand mixer, this was a hot cake that you make in a pot at first and the metal hand mixer would have damaged my coating on the pot. So, the only utensil I had to mix it with was a giant spatula from the Dollar Store. It looked like it was mixed fairly well, so I went forward and baked it. The bad thing about birthday cakes is it’s usually considered poor form to taste a piece first, unlike just bringing a cake randomly to work. So I gave it to the birthday boy and rudely asked for the first piece. While the frosting was delish, the cake was not it’s usual moist wonderfulness. So I took the cake! Yup, I took it back. Do you think a cake IOU is bad manners in this situation?
Anyhow, below is the recipe and usually it’s never fail and amazing! Just bring your own spoon!!!

Texas Mud Cake
1 cup water
1 cup (two sticks) butter
4 heaping tablespoons of cocoa
heat to a boil then turn off heat but leave on burner and quickly add the remainder of these ingredients:
2 cups sugar
2 cups flour
1/2 cup sour cream
2 eggs
1 and 1/4 teaspoon baking soda
MIX WELL with a spoon
pour into a 13X9 cake pan and bake for 22 minutes at 375 or until a toothpick poked into the center comes out clean

Frosting
1 stick butter
6 tablespoons milk
4 heaping tablespoons cocoa
Heat to a boil then remove from heat and add
1 pound powdered sugar
1 teaspoon vanilla
Mix well, it will be a little more liquidly than traditional frosting and then pour on to the warm cake and spread it out.
